Shepherd's Pie

First time baking shepherd's pie and surprisingly, even though the meat was kinda watery, but the taste was seriously superb!! Thyme's can really make a difference!

Ready to bake!! I don't have the small cups specially for shepherd's pie, so I used the big one. Haha..

180 degrees for 30 mins. The next time I will put longer so that the top more brown. Perhaps 190 degrees, 40 mins?

Tah dah ............. looks OK rite! How about the taste then? I was so excited to try out how does it tastes like and surprisingly, even though the meat was sort of watery, but it was awesome!

The remainder of the minced meat mixture. Learn from mistake, add lesser water! Hehe....

Pretty simple steps and anyone can cook this! Trust me.....

For mashed potatoes:
  • 6 tablespoon of butter
  • 3 large US potatoes
  • 1/4 cup of milk (adjust accordingly)
  • Salt to taste
For Minced meat
  • 2 big slices of chicken breast (diced)
  • 1 carrot (diced)
  • 1 tablespoon of Thyme (chopped)
  • Salt, pepper to taste
  • 1 tablespoon of Worcestershire sauce
  • 1 big onion,
  • 1 clove of garlic
  • 2 tablespoon of butter
  • Water
Steps :
  1. Usually people will boil the potatoes, but I choose to steam it which will take longer time to soft. The reason is to keep the nutrients in the potatoes instead of going out to the soup. You can boil it, which will take about 25-30 mins, diced it and it will get soft faster. If steam, it will take about 1 hour. You can choose either one. Steam/boil with salt.
  2. Drain and mash potatoes, add butter and milk. Pour in the milk little by little just in case you prepare too much of milk.
  3. For the meat mixture, add a little oil and butter for the fragrant smell and fry onion and garlic until fragrant.
  4. Add in chicken and carrot and a little of water. Add salt, pepper, and Worcestershire sauce.
  5. Lastly, add in Thyme.
  6. Place chicken mixture in baking dish. Distribute mashed potatoes on top. Rough up with a fork so that there are peaks that will brown nicely. You can use the fork to make some designs with the potatoes as well.
  7. Baked at 180-190 degrees C for 30-40 mins until the mashed potatoes turn brownish.
  8. Enjoy!!!!

Pretty simple rite and it's delicious! A lot of work and ask someone to help you with the mashing potatoes job (I don't like it). Hehehe...

TGIF @ 1Utama

This meal was actually to celebrate my RESIGNATION! Hahaha.... I just love these words : Hereby I tender my resignation effective XXX ! So nice! The feeling to tender is just so nice and awesome ok! This was actually my 2nd time to tender a resignation.. the first time was 24 hours notice, and 2nd resignation was 2 months notice.... nice nice. Hehe.... And I really thank God that once I've stepped out from my comfort zone, God has provided me the next level of growth! I like it! And God is really good......

It doesn't mean my current job is not good, but I'm too comfortable and there's no peak in my career, thus... I think it's time to move on. Leave the old, and welcome the new. God is always good.... ask and you will receive! Thank you, God! When I'm in my new company, the next challenge will arrive. But, since God has provided me this, He knows I can do it. Pray that everything will be good and ok.


Fried Mac & Cheese ~ Irresistable, creamy cheese and elbow noodles golden fried to perfection. I ordered the 2 courses set meal worth RM29.90.

Look at the yummy creamy cheese..... awwww. Irresistable!

Sizzling chicken and Shrimp (RM32.90) ~ Sauteed garlic-marinated chicken breast and plump shrimp tossed with zesty roma tomato-basil salsa. served with onions and peppers and our cheddar cheese mashed potatoes on a sizzling platter of melted Colby and Jack cheeses. Sounds interesting rite.. and this is really good!! But, the set sizzling chicken and cheese is more than enough. Don't have to order the Shrimp because not much difference, just additional of shrimp.

Southwest adobo chicken ~ Roasted half-chicken seasoned with lemon, garlic, cilantro and herb rub. Served with sweet potato fries and spicy Jalapeno chili sauce for dipping. This was too filling and I can't finish it. This set comes under the 2 course meal menu. And, the chicken smell is too strong that in the end, I swapped the food with Justin. If you're a big eater, order this from the 2 course menu. Really worth it.... hehe.

Chocolate Chip Yoghurt Cheesecake

I was browsing through all the cheesecake recipes and then I found this recipe that was pretty simple to bake! It's really easy - sap sap water compared to baking muffins. I still don't have the skills to bake good muffins.... who willing to teach me? Hehe...


Half chocolate chip and half pure yogurt cheesecake!


The overflowing cheese cupcake cause I dumped the remainder in one cup instead of separating it. ;P


Easy steps as below:
250gm of Philadelphia Cream Cheese
125gm of plain yoghurt
1 medium egg
50gm sugar (the initial sugar is 100gm, but I reduced it)
1 tablespoon of lemon juice
1 teaspoon of vanilla essence
3 tablespoon of self rising flour (sift it)
blueberry jam for topping
chocolate chips
Crust:
1 packet of biscuits, crushed.
2 tbsp. butter, melted
1 tbsp. sugar

1. Mix crust ingredients in a bowl. Press evenly over bottom of an ungreased springform pan and put in cupcakes cup.
2. Place cream cheese, sugar and vanilla essence in a bowl. Beat until smooth.
3. Add yoghurt, egg, lemon juice . Beat well.
4. Fold in the flour and chocolate chips.
5. Pour filling into the cups.
6. Baked at 150 degrees for about 40 mins.
7. Let it cool and then you can garnish with blueberry topping (thanks to Ieta for the idea! You can place order from her, it's delicious!)
8. You can also spread some cheddar cheese on top of the blueberry topping for more cheesy taste!

That's all and it's pretty simple!!

Comments from Justin : He said the yoghurt taste covered up the cheese, thus, the next time I will put about 3-4 tablespoon of yoghurt instead of 125gm of yoghurt. He prefer a more cheesy cupcakes instead of yogurt cheese.

Counting down ~ 15 days to BayWatch!

Gosh!!! I'm pretty excited and I just can't wait!! Time, please move faster....... speed up the working days and slow down the weekends + holidays! 15 days left, counting down from today onwards and well, life is so good! Even when there are times of down, but look at it positively and it is not everyday that your days are down! And I thank God, I took the first step out from my comfort zone and God leads me to the next path! God is really good..... Life is definitely good when you have such a great God.
Back to the topic.... hehehe. These pictures were taken in Krabi last year and well, it was so heaven! I felt so relax and can I don't go home?
I was so tired of fighting the wave and rested a while in the boat... Justin, happily enjoyed the fish spa moment! Nice!

Relaxing by the beach.... I don't mind to work from beach everyday! Hahahaha...

Oh Gosh!! I want to DIVE in NOW!!! As in NOW!
AAArrrrghhh... and thank God I booked a beach trip again this year! Every year, there must be at least a beach trip! Minimum requirement.... hahaha. And good enough, Justin loves beach too!!! Perfect couple indeed...... next year, Mauritius Island! Possible? Think Too Far............ LOL. How about Hawaii? Kah Kah Kah......... Dreaming................ If next year to Krabi again, I don't mind! Really............ People, quickly check out flight tickets and guarantee no regrets IF you are a baywatch lover! Hehehehe....

Sendat Waterfall @ Ulu Yam

Pictures credited to Kelvin Mok for such skillful and quality snaps! Instead of normal eat and eat outing, the committee decided to go for waterfall! Nice! But, beware of leeches and bring salt... our waterfall day was unlucky because it rained heavily in the middle of the night and when we left home, it was still drizzling. And thus, the leech appeared! I hate it.... and I got bitten! Yucks!

Black Canyon @ Centrepoint

Black Canyon is always the choice when we miss Thai food. Anyway, we will be away to Thailand very soon. And I just can't wait!! Snorkelling and fish fish fish..... Also, not to forget Thai Food!!! Wow wow wow............ Pretty excited and nice!

We ordered the set dinner that consists of mini tomyam soup, single scoop ice cream and main course to choose. Total will be RM14.90 per set. Price still ok for us in PJ when we didn't know what to eat after a long haul in office and don't know what to cook... =)

Spicy stir-fried salmon and hot basil with rice... yummy! Nice! But the Basil is irritating because every mouth you have to pui it away. Haha... but, the food is good!

Garlic stir fried rice with BBQ chicken.. Justin's order because he saw the Garlic fried rice and it's always his favorite... Garlic Man.

So, all the dishes that I cook especially stir fry vege there must be a lot of garlic.. else he won't enjoy. Haha.. =D

Steam Chicken Rice

Justin still can't forget the awesome Hainan chicken rice at Malacca, (view the post here) and to cure his cravings, I tried my own recipe of chicken rice at home. Not bad though and it turned out quite good and well, Justin said SUPERB!! The happiest moment is when people compliment about your food and ate them till so syok. No response when you talk to him... can you imagine how delicious it was! Haha...

Hainan rice~ Pretty simple to cook this, you can just get a ready pack of Hainanese Chicken Rice Mix from Jusco and mix them. I just added some chopped garlic, ginger, salt to taste and pandan leaves. Dumped everything and put in the rice cooker.

Marinade the chicken with salt, sesame oil, dash of pepper, chopped garlic and ginger, chopped spring onion and a tablespoon of soy sauce and steam the chicken until cook. Once cooked, drain the chicken and chop into pieces. For gravy, use some soup from the steamed chicken and add oyster sauce, a little of sugar and tablespoon of shao xing wine. And the remainder of the soup, add a bowl of water so that it's not that thick and you can drink it.

It's a Noodle Bar @ Bangsar Village II

This place was suggested by Jenny for the farewell of our few colleagues..... The name of this restaurant is kinda unique, instead of the normal name with the word "MEE" like All About Mee...



Watermelon (RM9), Apple (RM9), Soya Milk (RM5)

And I ordered this ~ Pineapple, orange and mint ice blended (RM9). I would rather order this blended drink since it's the same price as fruit juices. =D

Chicken flat rice noodles ~ Shredded chicken, chives and prawns in chicken and prawn soup (RM9.50)

Braised beef brisket noodles ~ Beef tripe, tendon, topside beef and radish with fine egg noodles (RM12.50)

Tomyam Seafood Vermicelli ~ Fish, prawns, squid in spicy clear soup. RM14.50

Asam Laksa ~ Kembong fish, pineapple, cucumber, chilli and shrimp paste with lai fun (RM9.50)


And I ordered this! Golden sauce noodles ~ Kembong fish, pineapple, cucumber, keropok with lai fun in spicy and sour sauce (RM9.50). Quite special because instead of asam laksa, this is something like kunyit laksa with santan. Worth trying.. =)

Indonesian baba noodles ~ Chicken, potatoes, eggplant in spicy curry sauce (RM9.50)


Good to hang out because it has wifi and nice environment.
